THE BASICS OF COOKING ELK

Elk has a deliciously clean flavor that isnít gamey. When cooking elk, preventing moisture loss is key to keeping the meat tender and preserving its delicate flavor. For best results, donít exceed an internal temperature of 140 degrees. If youíre comfortable with slightly pinker meat, 130 degrees is even better.

ďLOW AND SLOWĒ COOKING

For those that prefer their meat well done, try using a cooking technique like braising, where the meat is cooked at a low temperature for a long period of time. Braising or using a slow cooker will yield tender, juicy results.
